Ingredients of Khus Aloo Poori
Wheat flour – 2 cups
Potato – 2
Coriander Powder – 1 tsp
Red chili powder – 1/4 teaspoon
Turmeric Powder – 1/4 tsp
Azvayan – 1/4 tsp
Oil – for frying puris
Coriander – 2 tbsp (finely chopped)
Salt – as per taste

Method of preparation of potato poori
Wash potatoes and boil them first. After this, when the potatoes have cooled down, wash them and peel them and grate them. Now add flour and grated potatoes in a bowl and add celery, salt, turmeric, coriander powder, red chili powder and green coriander to it and mix well by mashing it with hands. For Puri Khuskhus (crisp), add 2 teaspoons of oil to the flour. Then knead some hard dough while adding water to it. Now cover the dough with a clean wet cloth and keep it for 20 minutes so that it sets well. After this, apply a little oil on the palm and with this hand, mash the flour for a while. Now cut small pieces of it. Now roll these balls round.

Put oil in a pan to heat. When the oil gets hot, fry the puris one by one and take out the puris in a paper container. So that the paper soaks up the excess oil. Take your hot potato hot. You can eat this with raita, curd, sour chutney and pickle.
